After pre-fermentation maceration, the Chardonnay is fermented in new oak barrels, where it is left for a few months on the fine lees to round out its rich character and acquire a fat flavour.
In contrast, the Assyrtiko is fermented in stainless steel tanks to retain its liveliness, giving the wine a note of freshness.
It has a straw-yellow colour with green hues.
Its expressive nose exudes aromas of ripe fruit (melon, apricot, pineapple) and notes of lemon, minerals and flowers against an elegant backdrop of vanilla and hazelnut.
It has a rich mouth feel, with a creamy texture, expansive taste and good structure.
Its acidity gives freshness, balances out its sweetness and adds elegance.
The intense finish carries notes of fruit, cedar and vanilla.
